Chicken Caesar Salad

Ingredients:

Chicken breast
2 lemons
Garlic
Dried Oregano
2 baby cos lettuce hearts
1 punnet cherry tomatoes – halved
3 slices of shortcut bacon (about 50g)
Croutons (Toss bread pieces in olive oil and bake at 180 until golden)
Parmesan cheese
Avocado (optional)

Method:

  1. Marinate chicken with oregano, garlic and olive oil for at least 1 hour
  2. Bake at 180 with some lemon wedges until cooked (about 15 minutes)
  3. top with fresh lemon juice
  4. Cut bacon into small pieces and fry it in a pan until cooked. Leave aside to cool

  5. Cut lettuce into small pieces – wash and dry

  6. Once the bacon has cooled, mix bacon, tomatoes and lettuce and chicken in a bowl. If you are not serving the salad yet, just leave it here and come back to it

  7. Once you are ready to serve it, mix in avocado, Parmesan and croutons

  8. top with salad dressing (up to you how much you want) and mix well. Eat immediately or it will get soggy 🙂
