
Ingredients:
Chicken breast
2 lemons
Garlic
Dried Oregano
2 baby cos lettuce hearts
1 punnet cherry tomatoes – halved
3 slices of shortcut bacon (about 50g)
Croutons (Toss bread pieces in olive oil and bake at 180 until golden)
Parmesan cheese
Avocado (optional)
Method:
- Marinate chicken with oregano, garlic and olive oil for at least 1 hour
- Bake at 180 with some lemon wedges until cooked (about 15 minutes)

- top with fresh lemon juice
- Cut bacon into small pieces and fry it in a pan until cooked. Leave aside to cool

- Cut lettuce into small pieces – wash and dry

- Once the bacon has cooled, mix bacon, tomatoes and lettuce and chicken in a bowl. If you are not serving the salad yet, just leave it here and come back to it

- Once you are ready to serve it, mix in avocado, Parmesan and croutons

- top with salad dressing (up to you how much you want) and mix well. Eat immediately or it will get soggy 🙂
