Another great way to use leftovers from this recipe and a fast easy meal. You can always make the croutons and dressing but from experience I’ve noticed it isn’t worth the effort. Just try different brands until you find one you are happy with 🙂
Ingredients:
2 baby cos lettuce hearts
1 punnet cherry tomatoes – halved
3 slices of shortcut bacon (about 50g)
Croutons
Parmesan cheese
Avocado (optional)
Method:
- Cut bacon into small pieces and fry it in a pan until cooked. Leave aside to cool
- Cut lettuce into small pieces – wash and dry
- Once the bacon has cooled, mix bacon, tomatoes and lettuce and chicken in a bowl. If you are not serving the salad yet, just leave it here and come back to it
- Once you are ready to serve it, mix in avocado, Parmesan and croutons
- top with salad dressing (up to you how much you want) and mix well. Eat immediately or it will get soggy 🙂
