Burrito Bowl

Ingredients:

– 2 cups of rice
– 2 cups chicken stock
– 1 avocado, mashed
– 1 can black beans, rinsed and drained
– 1/2 cup of corn kernals
– 2 tomatoes, diced
– 1/4 cup sour cream
– 500g beef mince
– 1 can salsa
– 1 packet taco seasoning
– juice of 1 lime

Method:

  1. In a pot, cook rice with chicken stock on low – add extra water if required

  2. Once cooked, mix in lime juice to the rice
  3. In a pan, heat up some oil and cook beef mince. Mix in salsa and taco seasoning

  4. Assemble with all the remaining ingredients. Top with cheese if desired
