Ingredients:
Short Ribs
1 onion – diced
1 shallot – chopped
3-4 cloves of garlic
Stem of 1 leek
2 carrots
rosemary
Thyme
2 fresh tomatoes
1 tin crush tomatoes
2 cups beef stock
bayleaf
Method:
1. Preheat oven to 160. Season and brown short ribs in the pan
2. remove ribs, cook onion, shallots and garlic til soft. Add leeks, carrots, thyme and rosemary and cook until fragrant
3. add tomatoes, tinned tomatoes, stock and bayleaf. Cook for 5 minutes to reduce slightly
4. Add ribs back in, ensure all ribs are covered. Put into the oven and braise for 2hours
5. Remove ribs and larger chunks, blend with a stick blender to create sauce
6. Serve with Polenta
