Beef udon

Ingredients:

2 packets frozen udon
150g minced beef
2 eggs
1 tablespoon soy sauce (for beef)
2 teaspoons white sugar (for beef)
2 cups chicken stock
1 tablespoon soy sauce
1 tablespoon mirin
1 tablespoon sugar
shallots (for garnishing)
Tofu or coquettes to serve

Method:

  1. in a pan, cook beef mince with soy and sugar

  2. Heat up chicken stock, sugar, mirin and soy. Bring to boil

  3. Add in udon (you can also cook tofu at this point)

  4. Once the udon is separated, cook for another 1-2 minutes and then remove the UDON ONLY from heat
  5. Poach the eggs in the remaining soup until just cooked (but still runny)
  6. Pour eggs and soup into the bowl with the udon. Top with beef and garnish with shallots
