Ingredients:
2 packets frozen udon
150g minced beef
2 eggs
1 tablespoon soy sauce (for beef)
2 teaspoons white sugar (for beef)
2 cups chicken stock
1 tablespoon soy sauce
1 tablespoon mirin
1 tablespoon sugar
shallots (for garnishing)
Tofu or coquettes to serve
Method:
- in a pan, cook beef mince with soy and sugar
- Heat up chicken stock, sugar, mirin and soy. Bring to boil
- Add in udon (you can also cook tofu at this point)
- Once the udon is separated, cook for another 1-2 minutes and then remove the UDON ONLY from heat
- Poach the eggs in the remaining soup until just cooked (but still runny)
- Pour eggs and soup into the bowl with the udon. Top with beef and garnish with shallots
