Beef and Quinoa bowl

Can be made with whatever veggies and ingredients you wish. Can leave the beef out for vegetarian

Ingredients:

1 cup quinoa or cous cous, cooked
a handful of spinach
a dozen cherry tomatoes, halved
1/4 cucumber, diced
1/2 avocado, sliced
1/2 butternut pumpkin, diced
200g steak (I use sirloin), thinly sliced
1 teaspoon butter
1/4 cup soy sauce
2 teaspoons sugar
1 tablespoon mirin
Onion, thinly sliced
1/2 cup button mushrooms, sliced

Method:

  1. Preheat the oven to 180 degrees
  2. In a pan, toss pumpkin in oil, salt and pepper. Bake in oven for 20-25 minutes or until soft

  3. cook quinoa or cous cous as per packet instructions. Run under cold water to chill

  4. melt butter in a pan and sear the steak. Add in soy, mirin and sugar and cook through. Remove from heat

  5. Toss spinach, tomatoes and cucumber together
  6. Place all items into a bowl, season with pepper and serve
