Banana Bread

Ingredients
1 3/4 cup self-raising flour
1/4 cup plain flour
1 teaspoon ground cinnamon
2/3 cup brown sugar
2.5 soft bananas
2 eggs
1/2 cup milk
50g butter, melted

Method:
1. Preheat the oven to 180. Brush a loaf pan (11 x 21cm) with melted butter or cover with baking paper

2. Sift the flours and cinnamon into a bowl. Stir in brown sugar

3. Using an electric mixer, mash the bananas. Then add in eggs, milk and melted butter

4. Make a well in the dry ingredients

5. Stir in the banana mix until just combined

6. pour into loaf pan

7. Bake for 45 minutes until a skewer comes out clean

8. cool in pan for 5 minutes then take out and cool on a cooling rack. Toast to serve with butter
