Ingredients:
4 green apples, peels and cut into pieces
3 teaspoons cornflour
1 teaspoon cinnamon
1/2 cup caster sugar
pinch of salt
1 teaspoon vanilla extract
1-2 sheets of puff pastry, cut into 4 squares
1 egg
Method:
- Put apples in a saucepan with corn flour, cinnamon, sugar and salt. Simmer on low


- Once liquid starts to form, add in vanilla extract and continue to simmer until apples are soft but not mushy (about 5-10 mins depending on the size of your apples)

- take off heat, leave to completely cool. If you need to speed this up, you can spread it on a sheet pan or plate
- Thaw puff pastry out and brush the sides with egg wash

- Add apple filling, fold into triangles and use a fork to push the sides together. Put the turnovers into the freezer while the oven preheats (no more than 30 mins)

- Preheat the oven to 200 degrees WITH a baking pan inside
- Take cold turnovers out, brush with egg wash and cover with a layer of sugar. Transfer to heated pan and bake for 20-25 mins until golden
