Apple Turnovers

Ingredients:

4 green apples, peels and cut into pieces
3 teaspoons cornflour
1 teaspoon cinnamon
1/2 cup caster sugar
pinch of salt
1 teaspoon vanilla extract
1-2 sheets of puff pastry, cut into 4 squares
1 egg

Method:

  1. Put apples in a saucepan with corn flour, cinnamon, sugar and salt. Simmer on low

  2. Once liquid starts to form, add in vanilla extract and continue to simmer until apples are soft but not mushy (about 5-10 mins depending on the size of your apples)

  3. take off heat, leave to completely cool. If you need to speed this up, you can spread it on a sheet pan or plate
  4. Thaw puff pastry out and brush the sides with egg wash

  5. Add apple filling, fold into triangles and use a fork to push the sides together. Put the turnovers into the freezer while the oven preheats (no more than 30 mins)

  6. Preheat the oven to 200 degrees WITH a baking pan inside
  7. Take cold turnovers out, brush with egg wash and cover with a layer of sugar. Transfer to heated pan and bake for 20-25 mins until golden
