Cauliflower Soup

Ingredients:

1 whole cauliflower – cut into small pieces
4 cups chicken stock
2 small brown onions – finely chopped
3 cloves garlic – crushed
2 teaspoons ground coriander
1 teaspoon cumin
1/2 cup cream
crusty bread to serve

Method:

  1. Heat some oil in a pan. Toss in onion and garlic – cook til soft

  2. Stir in coriander and cumin
  3. Pour in chicken stock and cauliflower and season with salt and pepper

  4. Cover and cook for 25-30 minutes until the cauliflower is very soft. Blend with a stick blender

  5. season with some extra pepper and serve with warm crusty bread
