Veggie skewers

A great side to serve at BBQs

Ingredients:

12 bamboo skewers
2 Zucchinis
1 large block Haloumi
1 packet cherry tomatoes – mixed variety
1 Capsicum
1 lime – cut in half

Method:

  1. Soak the skewers in water to stop them from burning
  2. Cut up the zucchini, capsicum and haloumi into small piece

  3. Thread the veggies onto skewers – you can mix it up however you like but I go with zucchini first then haloumi, 1 cherry tomato then capsicum

  4. Place the skewers onto a preheated barbecue or grill -medium heat. Squeeze half the lime onto the top and season with salt and pepper

  5. Cook for 5 -7 minutes until it is browned on one side. turn all the skewers over, squeeze the 2nd half of the lime on top and season with salt and pepper.
  6. Cook for a further 5 minutes and serve immediately
