Number 7 Udon Satay with chicken

(Name is a personal joke)
This recipe works with pretty much any veggies. You can also use different noodles or take the meat out to make it vegetarian. I use the below satay sauce

Ingredients:

3 chicken thighs – cut into small slices
1 tablespoon corn flour
1 tablespoon sugar
3 tablespoons soy sauce
1 onion – sliced
3 cloves garlic – crushed
2-3 slices of ginger
Any veggies you like – I used baby corn, snow peas, carrot and capsicum
2 packets udon
3 tablespoons satay sauce

Method:

  1. in a bowl, marinade chicken with soy, corn flour and sugar

  2. Boil some water in a pot and cook udon until it just comes apart. Drain and set aside

  3. Heat up some oil in a fry pan. Cook onion, garlic and ginger

  4. toss in chicken until just browned
  5. toss in veggies and satay sauce – cook until soft

  6. add in udon and mix well so all the noodles are covered in satay sauce. Serve immediately6
