Chorizo Pasta bake

Ingredients:

300g Chorizo – spicy works well
1 onion – finely chopped
3 cloves garlic – crushed
2 cans tinned tomatoes
1 cup chicken stock
50g Bacon or pancetta – diced
Italian herbs
2 tablespoons tomato paste
1/2 cup cream
1/2 cup mozzarella cheese
250g cooked fusilli

Method:

  1. Preheat oven to 180 degrees
  2. in a pan, heat up some oil and cook the garlic and onion

  3. Add in chorizo and bacon – stir well and cook for 5 minutes or until the chorizo is cooked

  4. Stir in 2 cans of tomatoes

  5. Stir in chicken stock and tomato paste

  6. Season with salt, pepper and italian herbs

  7. bring to a boil and stir in cream

  8. Bring to a simmer and stir in cooked pasta. Bring to a simmer

  9. Pour mixture into a roasting pan

  10. Top with mozzarella cheese and bake for 15 minutes or until cheese is melted and has started to brown on top

  11. Serve immediately
