- Remove steak from fridge and bring to room temp
- Turn on half a BBQ to heat up for 30-40 mins
- Add well seasoned steak to the side of the BBQ that is not turned on for indirect heat
- Cook for 1-1.5 hours until the internal temp is 53 degrees
- take out and rest
- Baste with butter
- Sear just before serving with direct heat on the BBQ
