Blueberry Bagels

Ingredients:
165g blueberries
20g sugar
250g bread flour
3G salt
2g yeast

1) mash blueberries and sugar. Microwave for a minute til warm and add yeast and leave for a few minutes

2) sift flour and salt into a bowl. Add blueberry in and mix using a dough hook for 5 mins (can also kneed by hand)

3) put dough into a bowl and cover with glad wrap and towel to proof for 30 minutes

4) cut into 4 portions, cover and proof for another 30 mins

5) preheat the oven to 200degrees and 1 oven tray.
6) Boil a pot of water adding 1 tablespoon of sugar per litre of water
7) shape dough into bagel shape, boil for 2 minutes in the water and put straight in the oven for 12-15 minutes
